Kaiseki Ryouri
Contributed by Sumiko Tajiri

Kaiseki Ryouri is formal Japanese cuisine. This cooking expresses seasons and coloring and is mainly eaten in the old city of Kyoto.

Kaiseki ryouri originated as a light meal eaten before a tea ceremony. Now, however, it refers to a course of Japanese cuisine served at a high-class restaurant. Since each dish is made from carefully selected seasonal ingredients and is served in beautiful plates, it is rather expensive.

A kaiseki meal includes:

Shiizakana--appetizers eaten with sake
Mukousukel--mainly sashimi
Kuchitori--a side dishe
Suimono--soup
Nimono--pickles
Hassun--morsels from the mountains and the sea
Sunomono--a vinegared dish
Ykimono--broiled fish
Mushimono--a steamed dish
Nabemono--a pot dish

Kaiseki ryouri also includes rice, miso soup and a dessert, such as ice cream.
