Kaiseki
Ryouri is formal Japanese cuisine. This cooking expresses seasons
and coloring and is mainly eaten in the old city of Kyoto.
Kaiseki
ryouri originated as a light meal eaten before a tea ceremony. Now,
however, it refers to a course of Japanese cuisine served at a high-class
restaurant. Since each dish is made from carefully selected seasonal
ingredients and is served in beautiful plates, it is rather expensive.
A
kaiseki meal includes:
Shiizakana--appetizers
eaten with sake
Mukousukel--mainly sashimi
Kuchitori--a side dishe
Suimono--soup
Nimono--pickles
Hassun--morsels from the mountains and the sea
Sunomono--a vinegared dish
Ykimono--broiled fish
Mushimono--a steamed dish
Nabemono--a pot dish
Kaiseki
ryouri also includes rice, miso soup and a dessert, such as ice
cream.
